Hand collected, gourmet dill pollen is wonderful to use on any dish that requires a true dill flavor and is three times as strong as the root or stalk.

This product will captivate the dill lovers with its aroma, and robust flavor. Use on fish, salads, pickling, and more. Feel free to be creative. Just a little bit will go a long way.

Dill pollen has been hand-harvested from the flowers of the dill plant, and should be added in the final stages of cooking or as a garnish to maintain its complex flavor and aroma. Dill pollen also keeps better than fresh dill, and has a better flavour than freeze-dried dill leaves.

Fennel Pollen

Fennel pollen graces the menus of high-end restaurants across the globe. Known as “gold-dust”, this secret ingredient does wonders. No matter what you use it on, the elusive taste, and mysteriously familiar aroma come into play. Our gourmet fennel spice is trans-formative and can disguise itself as curry, anise, licorice, and even saffron.

In an article for Saveur magazine, Peggy Knickerbocker wrote, "If angels sprinkled a spice from their wings, this would be it." This hand collected wild fennel pollen grows on the coastal and inland fields of sun-drenched California. Gourmet fennel pollen spice enhances the flavors of seafood, beef, poultry, pork, and even vegetables.  Pollen as a spice is more powerful and alluring than the plant itself.

Black Garlic

Black Garlic

Black Garlic has exploded onto the scene in recent times. This highly sought after ingredient is used in gourmet kitchens throughtout Korea, Japan, Europe and America.

Black Garlic's unique colour and texture is produced  by fermentation. The bulb is aged in high heat  and humidity for a period of time, this produces the jet black colour with a soft and slightly sticky consistancy. The taste is sweet with hint of balsamic vinegar and tamarind with tangy garlic undertones.

Edouard-Artzner Duck Fois Gras (100% Lobe)

Foie Gras is obtained by gently force-feeding the ducks 2 or 3 times a day for three weeks. Ducks naturally force feed themselves in the colder months of the year before migrating; this is so they build up enough reserves to fly the long distance of the migration. The ancient Egyptians were the first to notice this and took advantage of it by catching the birds just before they were ready to migrate.

The weight of the liver when the duck is slaughtered can be up to 900g, the best weight however is between 600g to 800g. Duck liver has a strong flavour and is pink-yellowish in colour.

To import Foie Gras into Australia, Australian Quarantine rules specify that the Foie Gras must be poached at 70°C in the centre.

Edouard-Artzner Goose Fat

Many people often think that animal fat is a ‘bad fat’; however goose fat is one that is good for you. Fat is an essential part of any balanced diet, it provides the body with the fat-soluble vitamins A, D, E and K; which are essential for growth; and contains essential fatty acids which are important in maintaining normal health and body functions. Goose fat in particular contains less saturated fats than butter or lard, it is high in healthy heart fats (i.e. monounsaturated and polyunsaturated) and it is also rich in oleic acid C18.1 (this fatty acid lowers blood cholesterol levels).

“Edouard-Artzner” goose fat is a very highly regarded French product that has been used by many fine food restaurants and passionate food connoisseurs.
